The Pinot Nero vineyards reserved for this selection are positioned in the Monferrato, south of the River Tanaro, at a height of 200-300 metres above sea level.
The soils are sandy rock in the north, while towards the south we find soils which are limestone and sandy rock of an older age.
After a gentle pressing, the free-run must is stored at low temperatures until it is given effervescence in pressurised fermenters at about 15oC. It then rests on the lees for at least 18 months. This process yields an elegant, lightly sparkling wine that releases subtle nuances of crusted bread and boasts a harmonious structure that enables it to complement a wide range of dishes.
