The Chardonnay grapes are sourced from vineyards located at an altitude between 350 and 500 m above sea level, where they enjoy ideal exposure.
After a light pressing, the must is held chilled until the production of effervescence in pressure tanks at ca. 15oC.
Then follows a six-month stay on the lees, designed to develop the sparkling wine’s complexity and good structure.
